Homemade Hot and Sour Soup

One of my most reliable flu remedies is Chinese hot and sour soup. The warmth of the vinegar and the nutrient-filled mushrooms and green onions provide a high dose of healing properties that can help stop sniffles before they get worse.

It’s been hard to find the U.S. version I’m used to here in Australia, so when my husband and I both came down with a bad cold recently, I decided to make a pot from scratch.

The original recipe can be found here, but I made quite a few adjustments to fit what I already had in my kitchen cabinets. Plus trying to find the recommended bamboo shoots and tiger lily buds just wasn’t going to happen considering we were quite a sick pair.

Chinese Hot and Sour Soup
Serves 4
Preparation Time: 5 minutes
Cooking Time: 25 minutes

Ingredients

1½ cups chopped white button or shitake mushrooms
4 cups vegetable stock
1 tsp. soy sauce
1 tsp. salt
½ tsp. sugar (or a bit more if you like it sweeter)
½ tsp. pepper
2 tbsp. red wine vinegar (I used white wine vinegar and added one tablespoon)
2 tbsp. cornstarch (I used four tbsp. of white flour instead)
3 tbsp. water
8 oz. firm organic tofu, cubed
1 egg, lightly beaten
1 tsp. sesame oil
3 tbsp. finely chopped green onions
2 cups chopped bok choy

Directions

In a medium pot, heat olive oil and quickly sauté mushrooms and bok choy for about three minutes. Add the vegetable stock and bring to a boil. Simmer for 10 minutes.

Stir in soy sauce, sugar, salt, pepper and vinegar. Combine cornstarch (or flour) with 3 tablespoons water. Add a little of the hot soup to the cornstarch, and then return all to the pot. Heat to boiling and stir frequently. Add the tofu and cook 1 to 2 minutes.

Just before serving, turn off the heat. Stir the egg in gradually. Mix in sesame oil. Sprinkle each serving with chopped green onions.
