Jazz Up Your Weekend Breakfast: Baked Eggs


Weekend brunch is my favorite meal.  I love the leisurely pace and the hearty food.  I recently discovered an awesome café up the road from us in North Sydney called Indulgent Sage.  Their baked eggs dish is delicious and inspired me to try our own version at home.

For this recipe, you’ll need a few ramekins or baking dishes.  We invested in two good-quality Le Creuset baking dishes.  If you can, avoid buying cheap non-stick ramekins as they are lined with chemicals.  Cast iron options, such as those made by Lodge, are also a great option.

Buy some crunchy bread at the market and get ready to dig in!

Greenista Baked Eggs
Serves Two
Preparation Time: 10 minutes
Cooking Time: 20 minutes

Note: If you are using single ramekins instead of a small baking dish, halve the ingredients.
4 eggs
12 small vine tomatoes, cut in half
2 tsp olive oil
4 handfuls spinach, kale or some other leafy green (we received rainbow chard in our CSA box, so I used that)
½ medium-sized onion, sliced into thin strips
1 cup tomato sauce
¾ cup shredded cheese (feta, goat cheese or parmesan work well)
Salt and pepper for seasoning
Hot sauce (optional)
Fresh basil or cilantro for garnish (optional)
Avocado, cubed (optional)

Recipe Instructions
Preheat oven to 400 degrees F (or 200 degrees C).

Drizzle olive oil, salt and pepper on cut tomatoes.  Mix together well to coat the tomatoes and assemble on a baking sheet, cut side up.  Bake for 10 minutes.

While tomatoes are baking, pour remaining olive oil into frying pan and cook onions and leafy greens until onions are soft and greens are wilted.  To caramelize onions, sprinkle a little bit of sugar on them.  Season with salt and pepper.  Remove from heat.

Once the tomatoes are out of the oven, divide them between the two ramekins or baking dishes.

Next, top the tomatoes with onions and leafy greens.

Using a spoon, pour in tomato sauce around the edges of each baking dish.  If desired, shake a few drops of hot sauce into the tomato sauce.

Make two wells in each baking dish (or a single well in the ramekin) and break the eggs into them.

Crumble shredded cheese over mixture.  Bake in oven for 10 minutes.

Remove and top with fresh herbs and avocado if desired.  Then dig in with chargrilled bread and enjoy your homemade gourmet brunch!
