Holiday Treat: Almond Sugar Cookies

Holiday baking is in full swing at our house!  With so many dishes to make, it’s great to have some easy recipes to fall back on, especially if you need to bring something at the last minute.  For a sweet end to Thanksgiving supper, or to begin planning what cookies to make for Santa, try these Almond Sugar Cookies.  Since this is a quick recipe, the dough doesn’t have to be chilled.  Simply roll the finished dough into balls or shape some cutouts like the holiday pumpkin ones I made below – but know that the cutouts don’t keep their shape as well with un-chilled dough.

Greenista’s Almond Sugar Cookies
Serving Size: About 48 small cookies
Cooking Time: 7-9 minutes per batch
Preparation Time: 10 minutes

2 cups all purpose flour
¾ cups pastry flour (substitute all purpose if you don’t have any)
¾ cups silvered almonds, finely ground
1 teaspoon baking soda
½ teaspoon baking powder
1 cup butter softened (i.e. two sticks)
1 ½ cups white sugar
1 egg
1 teaspoon vanilla extract


Preheat oven to 375 degrees.  In a small bowl, mix together and sift the dry ingredients: all purpose flour, pastry flour, baking soda and baking powder.

Take ¾ cup silvered almonds and grind into a fine powder.  Add to bowl with dry ingredients.

Beat butter and sugar in a separate bowl together until smooth.  Add egg and vanilla extract.  Continue beating.

Blend in dry ingredients slowly until completely incorporated.

Form dough into small individual balls OR form dough into one ball and roll out on a clean surface.  As this dough hasn’t been chilled, it’s easier to roll it out with the palm of your hand instead of a rolling pin (which might stick to it). Shape the cutouts on the surface of the dough.

Place cookies on ungreased sheet and bake for 7-9 minutes until golden.  Let cool for 10 minutes and enjoy!
